Natural sturgeon stocks are protected worldwide because of over exploitation and loss of natural habitats. So, farming the sturgeon is imperative for protecting and saving the fossil species. The sturgeon farm of ZwyerCaviar’s exclusive partner Esturiones del Rio Negro in Uruguay is designed on the principles of Organic Food Production. “Being the Best in Class” is the guiding principle of ZwyerCaviar’s philosophy and therefore its commitment with partners. The farming system is ecologically conditioned to take advantage of local resources, including an abundant supply of Uruguay’s unique climate.
